Following Gary’s retirement from a highly esteemed career in London, Hunters Chocolate devotes its time and energy to raising the knowledge and virtues of high-quality artisan chocolate.
Presenting courses for the home cook and the professional, and covering everything from ‘bean to bar’, Hunters Chocolate aims to inspire chocolate lovers everywhere with insight into the chocolate-making process covering chocolate tasting from plantation, single origin and blended grades, diverse methods of tempering, moulding, filling, and practical sessions to create your own bars, spraying and colouring techniques, and flavour pairing fillings to single origin chocolate.
With chocolate coursing through his veins for much of his professional career, 20 years ago Gary became a UK Chocolate Ambassador for Barry Callebaut – the exclusive and by-invitation-only Chocolate Ambassador Club gathers almost 200 of the best pastry chefs and chocolatiers from around the world, all of whom have a talent with, and a passion for, chocolate.

Concentrating on handcrafted confections made using only high-quality ingredients, Gary is now taking bookings in his Academy for several courses, ranging from a one day ‘Introduction to Chocolate’, to a two day, ‘Creative Chocolate Masterclass’. All classes are hands-on and are suitable for anyone who has an interest in chocolate, whether you want to learn new skills, develop existing skills, make chocolates at home, update your professional knowledge, or are even considering starting your own business.
Hunters Chocolate has a boutique retail range that is available to buy. Refusing the additives and mass assembly lines in favour of handcrafting each piece from premium chocolate, butter, nuts, spices, and only using natural flavours. The end creation is a line of signature chocolates and imaginative innovations that taste, look, and smell unlike anything else.
Delivered anywhere in the UK in elegant packaging, with each box being carefully hand-packed, with hand-tied ribbon and hand-written expiration dates, they take inspiration from design, fashion and the seasons. The introductory range of chocolates, the Classic Collection, is comprised of six definitive flavour combinations, available in boxes of 12, 18 or 24.
